Yogurt Beet Dip

Ingredients

  • 1 bottle (1 cup) Honey Vanilla Früzinga yogurt
  • 2-4 beets (depending on size), trimmed and scrubbed
  • 1/2 cup chopped cucumber
  • 1 teaspoon minced garlic (about 2 cloves)
  • dill
  • 3 tablespoons olive oil, reserve extra for beets
  • lemon juice, to taste
  • salt + pepper
  • sprouts or nuts (optional)

Instructions

Place everything into a food processor, mix and enjoy!
